We proudly double distill our spirits, from our vibrant gins to our rich liqueurs. This deliberate two-step process, unlike single distillation or column still methods, meticulously refines the spirit. The result is a remarkably softer, mellower, and more nuanced flavor profile, allowing the intricate botanicals and thoughtful ingredients to truly shine for a smoother, deeply complex drinking experience.

Expert Botanical Distillation

The preservation and selection of specific aromas and flavors in spirits with botanicals demands more than simple extraction. We understand how distillation speed, technique, proof during maceration, and starting proof prior to distillation can encourage or discourage specific characteristics, ensuring the final distillate captures the intended essence and complexity of each botanical.

Slow Temperature Curve

Our slow and deliberate application of heat into the distillation system is key to preserving delicate aromas and flavors. This allows us to carefully select specific parts of the distillation to include in the “hearts” – the most desirable part of the distillate – ensuring an extremely hands-on approach to flavor selection, rather than relying solely on proofs or timing.

Tranchage

After double distillation, our liqueurs undergo Tranchage, a rare historical mellowing process. The spirit rests a third time in the still at temperature for nearly 24 hours. As it naturally cools, this process deeply enhances flavor and complexity, imparting a new level of softness and delicacy.
